Chef Hicham Merouane

Chef Hicham Merouane was brought up in one of the world’s interesting countries, province of Rabat in Morocco, with a colorful culture and traditions with food rich with flavors that are not only cooked with passion but with all the wonderful spices that tickle one’s palate. Growing up in a household where having this kind of food inspired him to pursue his dream of becoming a chef.

He started his culinary journey at the very young age of 19. In the year 1989, he dedicated his rigid training for 2 years at the Centre de Formation Hotelière Professionnelle, Benslimane in Morocco. He then continued and completed his training for 3 years at L’école Hôtelière de Sale, combining the 5 years that made him so competent and efficient in the field of culinary. 

However, Chef Hicham’s journey did not stop there. Driven by a desire to excel and impart his knowledge to others, he sought advanced professional training in the Federal Republic of Germany. There, he immersed himself in an intensive two-year program that culminated in earning a diploma for advanced professional training. This experience was transformative, as it not only deepened his culinary expertise but also certified him as an instructor in the hotel industry. From 1994 to 1996, Chef Hicham imparted his knowledge to aspiring chefs, blending his Moroccan roots with the precision and discipline of German culinary standards.

In 2000, Chef Hicham’s passion for teaching took him to the United States, where he worked on various projects before returning to Cebu in 2002 to continue his teaching career. Now, he brings his wealth of experience and international perspective to Iloilo, where he is dedicated to nurturing the next generation of culinary professionals. He firmly believes in the potential of Ilonggos to not only excel in the culinary industry within the Philippines but to also achieve global success. Chef Hicham is committed to helping them realize their talent, prepare for success, and conquer the culinary world.
